How on earth did I miss sharing our favorite rice waffles with you all? I can scarcely forgive myself.
In my defense -- these fabulous waffles have been a family staple for about ten years now, so, we'll just say it was their ubiqutious presence which caused me to forget them. Although, 'forget' is a bit harsh, don't you think? 'Overlooked', perhaps; 'taken for granted', often. But, groveling excuses aside aside -- starting today: in the shadows no longer. Rice waffles, take a bow. Your [long over-due] moment in the limelight has [finally]arrived.
2 c. brown rice flour
1/2 t. iodine-free salt
1/2 t. corn-free baking powder
1/2 t. baking soda
1/3 c. all-natural applesauce
3 organic eggs
1 T. local raw honey
1/3 c. expeller pressed oil
1 1/2 - 2 c. rice milk
Using an electric mixer or a wire whisk, blend the eggs, honey, oil, and rice milk together.
Sift together the flour, salt, baking powder and soda.
Mix or whisk the wet and dry ingredients together until smoothly combined.
Pour 2/3 c. batter onto an [oiled] traditional-size waffle iron. Set a timer for seven minutes.

Set out cloth linens, your favorite mismatched dishes, and either delicate cups or hearty mugs. (Saturday mornings and pajama-clad cook's helpers definitely contribute to the success of the waffle.)
Arrange dishes and jars of natural peanut butter, thinly sliced fruit, pure maple syrup, local honey, and all-natural applesauce.
Pre-heat the oven to 170 degrees. As the waffles are done, place them in the oven to keep them warm until the entire batch is finished.
Devour.
And should there -- heaven forbid -- should there be any waffles left over, take heart. They freeze absolutely beautifully, and need a mere pop in the toaster to be brought back to life.

Notes: The applesauce is positively crucial [not optional] to this recipe. Because rice flour tends to yield a drier baked good, applesauce contributes the moisture necessary to produce a waffle with the proper [delicious] texture.
And yes, you need to cook them for the full seven minutes. =)
