Wheat-Free/Corn-Free Banana Bread for Bread Machine



This morning, sheets of fog rolled in across the dreary Midwestern flats and sedately wrapped themselves around fading ferns and tall, pale trees. The mercury dipped lower than it has yet this season, and, I, not yet ready to let the summer go, sighed in resignation to autumn's persistent knocking.

Inside, steam rose sleepily from a damp white-tea-bag, and I settled into the corner of the green plaid couch, mentally adding a few new ingredients - cinnamon, apple, and dates - to my rice-flour banana bread recipe.

Now, a few hours later, the comforting aroma wafts out of the kitchen and up, over the oak banister, to the peaceful bedrooms upstairs. And perhaps best of all --outside, the fog retreats and the smiling sun rises higher and higher, happily melting through the defenseless clouds.

3 ripe mashed bananas
2 organic, free-range eggs
1/3 cup gently melted butter
1 Tablespoon sour cream + 1 Tablespoon water or fruit juice
(2 tablespoons rice milk or other alternative liquid can be substituted)

1/2 cup + 1/3 cup white rice flour, good quality such as Bob’s Red Mill
1/2 cup brown rice flour, good quality
1/4 cup freshly-ground flax meal (place flax seeds in blender)
1/3 cup sugar
2 tablespoons tapioca starch
1 teaspoon cinnamon
1 1/4 teaspoons corn-free baking powder
1/2 teaspoon baking soda
1/2 teaspoon iodine-free salt
optional: 1 teaspoon xanthan gum, if tolerated

1/4 cup raw apple, diced
4-5 no additives/preservatives all-natural dates, diced

Mash with fork until bananas are partly smooth – retain some of the natural texture of the fruit. Blend eggs, melted butter and liquid, and add to the mashed bananas. Stir in diced apple and date pieces.

Grease inside of bread pan well, and pour the banana mixture into bread pan.

In separate bowl, whisk together all dry ingredients. Add dry ingredients to the mixture already in bread pan.

Set machine to “quick bread” cycle (approximately 1 hour and 45 minutes).

Serve plain, with all-natural peanut butter, or with butter and fresh unfiltered honey. Delicious!

Sounds great but I am allergig to bananas too!!
