Peanut Vinaigrette

3 tablespoons peanut oil
3 tablespoons rich, dark balsamic vinegar
3 tablespoons sugar [Use non-GMO beet sugar. Cane sugar is closely related to the corn family]
generous amount freshly ground black pepper

Toss over salad greens with chopped peanuts. [Do not purchase dry-roasted peanuts, as they are contaminated with corn.]
