Curried Fruit Salad

dollop of all-natural mayonnaise such as Vegenaise
splash of rice milk
drizzle of brown rice syrup, such as Lundberg's
dash of curry powder to taste

one crisp, tart apple, diced
equal amount of fresh broccoli, diced
handful of raisins

[Author's Note 2009: This is still one of my favorites, but I've made some changes since I developed the recipe. It's almost impossible to find rice milk that's not fortified (the added vitamins contain corn) so I've switched to an organic plain soy milk containing only filtered water and whole soybeans. Also, check curry powder labels carefully to be sure it doesn't contain any fillers. And last of all, the wax on conventional fruits and vegetables can contain corn. At the very least, peel completely -- better, though, to buy organic.)

Whisk together first four ingredients until smooth. Add apple, broccoli and raisins and toss to coat. Chill 1/2 hour or so to blend flavors. Enjoy!
